With college students headed back to campus, we’ve been putting together some easy recipes that can be thrown together easily in a dorm room.
Now, a couple readers came forward to remind us that cooking in a dorm room is not allowed at some colleges. Those colleges should be abandoned, or students should begin a violent culinary revolution and reclaim their grub.
This recipe only requires some basic ingredients and a crockpot. The result is hearty enough to keep students fueled while they storm the admin building to regain the right to cook more than Ramen.
Crock Pot Chicken and Rice
Ingredients
- 1 roasted chicken (from grocery store) cut into 1 inch cubes
- 1/2 cup chopped sweet onion
- 1/2 cup carrots, diced
- 1 clove garlic, minced
- 2 cups water
- 2 cups instant rice
- 2 tbsp butter
- 1 can cream of chicken soup
- 1/2 cup Parmesan cheese

Preparation: Mix chicken, onion, carrot and water and pour into greased crock pot. Cook on medium for 6 hours.
Stir in rice and butter and cook on high for 5 to 10 minutes until tender.
Stir in soup and cheese and cook for 10-15 minutes. Serve.
