In the last few weeks, we’ve been coming to terms with the end of summer, the return to classrooms and the necessities of dorm life. As part of that public service, we’ve offered up some comfort food recipes that can come together in any college dorm environment.
If you can smuggle in a microwave or pressure cooker, you can make or bake just about anything. If you want proof, take on this Lasagna Pie.
Ingredients:
- 1/3 cup Ricotta cheese
- 3 tbsp Parmesan cheese
- 1 lb ground chuck
- 1 cup shredded mozzarella
- 1 jar spaghetti sauce

Put aside:
- 1/2 tsp salt
- 1/2 cup Bisquick
- 1 cup milk
- 2 eggs
Preparation: Heat cooker to 375 degrees. Spread Ricotta cheese in bottom of cooker. Top with Parmesan cheese.
Brown ground beef, drain well. Stir in 1/2 cup mozzarella cheese, the 1/2 cup spaghetti sauce and salt. Spoon over cheese.
In separate bowl mix Bisquick, milk and eggs until well blended. Pour over meat mixture. Bake for 30-35 minutes. Top with remaining mozzarella cheese and bake 2-3 more minutes until cheese melts. Cool for 5 minutes and cut into slices. Serve.
