Summer Is Never Too Hot for a Sausage Soup Recipe

Diners might not think of soup as a summertime food, but this delicious sausage soup recipe is great for a party. The guests are asked to each bring an ingredient for the soup pot. After all the ingredients are combined, the guests can enjoy drinks and appetizers while the main course cooks.

You can also prepare the recipe yourself and keep it in the freezer for days when you’re too lazy to cook.

Ingredients:

  • 1 clove garlic
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 4 cups thinly sliced onion
  • 6 cans (14 1/2 oz each) beef broth
  • 2 cups tomato purée (1 can tomato sauce, 1 can tomato paste with enough water to make 2 cups)
  • 1 tablespoon red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon sugar
  • 1/2 teaspoon each dried oregano, tarragon, cumin, salt and pepper
  • 1/4 to 1/2 teaspoon hot pepper sauce
  • Vegetables (Choose two or three: 1 1/2 cups each diced green pepper, tomato or carrots 2 cups sliced fresh mushrooms.)
  • Meats: Choose two: 3 cups cooked cubed chicken, 3 cups cooked cubed ham, 2 cups cooked sausage – Kielbasa, smoked sausage or bratwurst, sliced and browned.)
  • Garnishes: Shredded cheese, sour cream, croutons or oyster crackers.

Preparation: In a large soup kettle, sauté the onions and garlic in butter until tender. Stir in flour and blend.

Add the broth, purée, vinegar and seasonings. Bring to a boil. Reduce the heat and simmer for 30 minutes.

Add meats and heat through. Garnish as desired.
