If you don’t want the grad in your life to knock fast food three times a day, it’s a good idea to start encouraging him or her to cook. The best way to help make that happen is to provide some simple, comfort food recipes to pass along — dishes that encourage home cooking.
These great tasting meatballs are just such a recipe. They can be served over rice or noodles or on sub rolls. Make smaller meatballs for appetizers.
Ingredients:
- 2 pounds ground beef
- 2 cups seasoned bread crumbs
- 1 cup milk
- 1/4 cup dried minced onion
- 2 tsps garlic salt
- 1/4 tsp pepper
- 1 8 oz block of mozzarella cheese
- 1/3 cup flour
- 1/4 cup cooking oil
- 2 jars (28 oz each) pizza sauce
Preparation: In a bowl, combine the first 6 ingredients just until mixed. Shape into 48 small meatballs. Cut cheese into 48 cubes, 1/2 inch each. Push a cube into the center of each meatball, covering the cheese completely. Roll in flour.
In a large fry pan, cook the meatballs in oil until brown; drain. Add the pizza sauce; bring to boil. Reduce the heat; cover and simmer for 30 minutes, or until meatballs are no longer pink.
