Try All-American Recipes for Memorial Day Weekend

Memorial Day is more than a three day weekend and the unofficial start to summer. It’s a proud American holiday to celebrate freedom and give thanks for everything we enjoy in the USA.

There are many elements to celebrating a Memorial Day weekend — from familial to musical to culinary. The latter often involves grilling outside, but it’s also fun over the three day celebration to embrace some traditional, U.S. comfort food. We’re throwing in a couple recipes here that are thoroughly American. All we’re leaving out is the apple pie.

Chicken n’ Biscuits

Ingredients

  • 1 can cream of celery soup
  • 1 can cream of potato soup
  • 1 cup milk
  • 2 cups cubed cooked chicken
  • 4 cups cooked, cut vegetables
  • 1/4 tsp dried thyme leaves
  • 1/4 tsp black pepper
  • 1 pkg. refrigerated buttermilk biscuits

Preparation: Combine soups, milk spices, vegetables and chicken in a 9×13 pan. Bake at 400 degrees for 15 minutes. Stir.

Cut biscuits into quarters. Arrange over the chicken mixture. Bake for 15 minute or until biscuits are golden brown.

 

Chicken Pot Pie

Ingredients:

  • 1 can mushroom soup
  • 1 can evaporated milk
  • 1/4 cup parsley
  • 1/2 teaspoon thyme
  • 3 cups cubed chicken
  • 1 pkg frozen mixed vegetables
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper

Crust Ingredients

  • 3/4 cup flour
  • 3/4 cup mashed potato flakes
  • 1/4 cup Parmesan cheese
  • 1/3 cup butter
  • 1/4 cup ice water
  • Cream

Preparation: In a bowl, combine first four ingredients. Stir in chicken, vegetables, salt and pepper.

Spoon into a greased 11 by 7 baking dish. Combine potato flakes, flour and Parmesan in a bowl. Cut in butter with a fork.

For the crust, add water one tablespoon at a time, stirring with a fork until dough forms a ball. On a floured surface, roll the dough to fit the pan.

Place over filling, pressing edges to form a tight closure. Vent by cutting v shapes with knife. Burs cream over top with a pastry brush. Bake at 400 degrees for 25 – 30 minutes.
