Looking for an alternative to those nice cold beers on a hot summer day?
The Arch Hotel at London’s Marble Arch is churning out sorbet cocktails, including a flight of four. Our favorites are the Bloody Mary and Pimm’s inspired glasses of granita. Think grown-up smoothie, and its an easy one to make at home. We recommend making a big batch, and scooping it into tall glasses with a long spoon for a slightly more sophisticated barbecue beverage.
Bloody Mary Sorbet Cocktail
Ingredients:
- 50 g caster sugar
- 50 ml water
- 300 ml tomato juice
- 25 g vodka
- Juice 1⁄2 lemon
- 1⁄2 tsp celery salt
- 1tsp tabasco sauce
- 1tsp sorbet stabilizer (available through online grocers) *

Preparation: Bring the sugar and water to the boil and simmer for 6 or 7 minutes to form a syrup.
Add the stabilizer and allow to cool. Add the remaining ingredients and place in an ice cream maker and churn until frozen.
To serve, line the rim of a martini glass with salt and pepper and garnish with a celery stick, celery leaf and a twist of lemon.
* The stabilizer will improve the texture and storage of the sorbet and helps maintain its structure at room temp for longer periods.
